Eddie Spence MBE

Royal Icing expert, Eddie Spence began his career as an apprentice baker for J W Mackie in Edinburgh. He then went on to study confectionery and cake design and taught at a wealth of prestigious colleges, including Napier College in Edinburgh, Kedleston College and Wilmorton College in Derby. Eddie's World renowned royal icing skills earned him the opportunity to decorate many cakes for the royal family, including a wedding cake for Prince Charles and Princess Diana and Her Majesty the Queen's golden wedding anniversary cake. He also won the British Open Confectionery Trophy and was awarded an MBE in 2000.

Paddi is one of the UK's leading figures in sugar craft and author of 'Sugar Flowers' (see below). With a career spanning almost two decades, she continually strives to study, design and develop new techniques and skills, which enables her to continue to be creative at the top and forefront of her profession. Paddi's vast teaching experience, coupled with a passion for her subject and friendly approach, means that she one of the most popular and sought after tutors both in the UK and overseas. She has also won several medals for her work.

Since Graduating Bakery College with distinctions in 1980 Ceri has, for periods of time, lived and decorated in both America and Australia, these influences can certainly be seen in his work. Ceri's main skills are in traditional royal icing; a medium in which he is most at home; however, moving with the times has meant that Ceri is constantly looking at modern styles for royal icing in his design work. Ceri's decorating can regularly be seen between the covers of Squires publications as he strives to give Royal Icing a contemporary edge and to encourage the use of this versatile medium. Ceri's cake designs have won Gold, silver and bronze awards at both the NEC Cake and other major bakery and confectionery competitions. He is a great believer that each new skill learned is a gift to be treasured and that knowledge is best shared.

Annie Relph MA MMus

An experienced artist and teacher in several creative fields, including Art and Music, Annie has been making and decorating cakes for more than ten years and runs a succesful Designer Wedding Cake business. She has a strong determination to find the very 'best' way of achieving excellence, especially in terms of structuring and finishing decorated cakes. Annie can work with you on any project, from design and planning through to understanding the basic prinicples of baking science, preparing and finishing a cake for marzipan and sugarpaste to applying the final decorative finishes. Annie can help you to develop your cake making skills - whether you want to make your own wedding cake, or a cake for family and friends, or take your skills to a higher professional level.
